Dessert of the Week: Homemade Blueberry Frozen Yogurt

Here is the easiest possible recipe you can have for making frozen yogurt.  It takes minutes to prepare, and can be done with or without an ice cream maker.  I substituted skim milk and non-fat yogurt to make it a little healthier.  Once you taste it, too, you won’t be missing the heavy creams and whole milk because this yogurt is amazing, and you’ll be grabbing lots of bowls of it.

Homemade Blueberry Frozen Yogurt

Ingredients: 
– 1 heaping cup frozen blueberries
– 1 1/4 cups non-fat vanilla yogurt
– 1 1/4 cups skim milk
– 1/2 cup sugar
– 1 tsp. vanilla extract
– juice of 1 lemon

First, pour the blueberries into a food processor or blender.

Puree the blueberries for a few seconds to chop them up nicely.

Add the chopped blueberries, yogurt, sugar, vanilla extract, and lemon juice into a medium-sized bowl and mix well.

Pour in the milk and stir again.  The yogurt mixture will be fairly creamy at this point.

If you don’t have an ice cream maker, pour the mixture into a freezer-safe container and let it freeze overnight.  If you do have an ice cream maker, add the mixture into the maker and run it for at least 15 minutes, until the yogurt has reached a soft-serve consistency. 

Spoon the frozen yogurt into a freezer-safe container and place it in the freezer for at least two hours before serving.  

Once hardened, the ice cream is ready to be served.  Enjoy!

We made this ice cream as part of our Thanksgiving dinner.  It was a huge hit.  My dad, who is extremely health-conscious, ate three bowls of it.

This frozen blueberry yogurt is light, refreshing, and the perfect dessert no matter the occasion.  I recommend it to everyone.
