Dinner of the Week: Buffalo Chicken Pizza

Buffalo chicken pizza is Evan’s and my brother’s absolute favorite.  I hoped that this version from eMeals was going to be a winner for both of them — sure enough, it was!  This is an easy recipe that can be made for any busy weeknight.

– 1 lbs. chicken tenderloins
– 2 tbs. chicken seasoning
– 1 can refrigerated pizza crust
– 1/2 cup pasta sauce of choice
– 1/4 cup thinly sliced celery
– 5 tablespoons hot pepper sauce
– 1 tablespoon margarine, melted
– 4 oz. shredded mozzarella cheese
– 2 oz. crumbled bleu cheese
First, preheat the oven to 400 degrees.  Wash, pat dry, and clean the chicken tenderloins.  Sprinkle your favorite chicken seasoning on top.
Fill a medium-sized saucepan halfway with water.  Set it on the stovetop over medium high heat.  Add the chicken to the water and let them cook for approximately 10 minutes.

Meanwhile, bring out a pizza stone or cookie sheet, and spray it with non-stick cooking spray.  Spread the uncooked pizza crust across it in a large circle. Prebake it in the oven for 10 minutes.

Then, dice the celery into small slices.

Once the pizza crust is done baking, coat it with a thick layer of pasta sauce.  Evenly sprinkle the celery across the top.

Once the chicken is done, drain the saucepan and chop the chicken into bite-sized pieces.
Choose your favorite buffalo sauce to give the pizza a kick!  I chose Tabasco’s Buffalo Style hot sauce.  It’s a favorite in our house.

Add the chicken, melted margarine, and the hot sauce to a mixing bowl.  Toss the ingredients together to coat.

Arrange the chicken on top of the pizza. 
Sprinkle with cheeses and it’s ready for the oven.  Bake it at 400 degrees until the crust begins to brown and the cheese melts, about 10-15 minutes.  

Slice it with a pizza cutter and enjoy!

Evan and Cory polished off this pizza in about 10 minutes.  I’d say it was a winner!

This recipe has a perfect combination of sweet pasta sauce, fiery buffalo chicken, and gooey cheeses.  It is one of my favorite pizza recipes that I’ve tried, and I know that it’ll become a regular one in our house.
