Mexican food is my weakness. I could eat it every day. This recipe, which we received from eMeals.com, is a fantastic guilt-free version of an easy way you can make burritos from home. Evan and I loved it.
Black Bean and Cilantro Skillet Burritos

– 1 can black beans, rinsed
– 1 small box instant brown rice
– 1/2 cup favorite salsa of choice
– 1 large handful of cilantro, minced
– 1/2 cup fat free cheddar cheese, shredded
– 2 teaspoons chipotle chili powder
– 2 teaspoons cumin
– Large tortillas
– Fat free cooking spray
To get started, pour the can of black beans into a colander and rinse them well.
Next, choose your salsa. If you haven’t tried Mrs. Renfro’s salsa, I highly recommend it. For this one, I used her Smoky Roasted Salsa.
In a large bowl, add the black beans, salsa, cilantro, cheese, chipotle chili powder, and cumin.
Meanwhile, cook the instant brown rice to the manufacturer’s instructions, until the rice is light and fluffy.
Add it to the black bean and salsa mixture.
To make the burritos, it helps if you soften the tortillas first. The best way to do this is to place three or four of them on a microwaveable plate and then seal the plate with a layer of plastic wrap. Microwave the tortillas for 20-30 seconds. They’ll be perfectly steamed.
Then, place a dollop of black bean and salsa mixture onto an individual tortilla. Do your best to roll it up Chipotle-style.
I am not very good at this.
Then, heat a skillet over medium high heat. Spray the edge-side of your burritos with fat free cooking spray so that the seams won’t stick to the skillet.
Cook the burritos for approximately 10-12 minutes, until the bottom begins to brown. Flip the burritos over and repeat.
These burritos are amazing. Cooking them in a skillet makes them perfectly warm and crunchy. the cilantro ties in a refreshing twist with the brown rice. The combination of the salsa and additional spices also help bring a slight kick.
We served these burritos with a side salad. It was a perfect weeknight meal.
