Dinner of the Week: Baked Spaghetti

Evan and I have gotten stuck in a rut where we wake up, go to work, and pick up carry-out at the end of the long day.  A good friend of ours told us about eMeals.com, which is a website that helps plan a week’s worth of meals for you based on what’s on sale at your local grocery store and what diet plan you’d like to use.  We decided to give it a shot!  All of the recipes that we’ve tried are delicious, easy to make, and healthy. Here’s a great recipe for a weeknight!  You can also dress it up by making your own marinara sauce from scratch or adding vegetables like zucchini and squash.
Baked Spaghetti

– 8 oz. whole wheat spaghetti
– 3 egg whites
– 1/2 cup shredded parmesan cheese
– 1 cup part skim ricotta cheese
– 1/2 lb. ground turkey
– 1/2 jar pasta sauce
– 1/2 cup shredded mozzarella cheese
First, preheat the oven to 350 degrees. Bring a pot of water to a boil, and cook the spaghetti until al dente.  Drain once done.
Combine the egg whites, parmesan cheese, and ricotta cheese together in a mixing bowl.

Add your spaghetti to to a larger bowl and cover with the egg and cheese mixture.

Toss well to coat evenly.  Once done, place the spaghetti mixture in a casserole dish.

Meanwhile, brown the ground turkey in a skillet over medium heat.  Add the pasta sauce to it once it is cooked.  
Top the spaghetti mixture with the ground turkey and sauce once done.

Sprinkle mozzarella cheese on top.  Bake in the oven, uncovered, for 25-30 minutes.

And you’re done!

Evan polished up his plate in about 15 minutes, so I’d say that this recipe’s a good one.
